That would have been especially exploitable in the first two games, where the timer keeps going until you cross the bonus plate, or pop the capsule in most acts featuring bosses. In this one, it stops the very moment you beat the boss.
... However, this also opens a new can of worms. Since bonus plates aren't just lying there for you to cross in Sonic 3 as they were in the previous two games, but rather fall from the sky once you defeat any zone's act 1 sub-boss, and you get 100 points each time you bounce them, you can actually keep juggling them indefinitely, and get as many points as you want. This can also make for some serious two-player volleyballing, lol.
